Mushroom Ularthiyathu/ Mushroom Roast

I love mushrooms and this is one of the favourites from ma mom's kitchen! Can be made quickly and is really yummy!


Ingredients:
  1. Button Mushrooms (cut into smaller pieces) - 1 cup
  2. Shallots - 4-5 nos
  3. Dry red chillies - 2nos (You can add more if you want the dish to be spicy)
  4. Turmeric powder - 1/2 tsp
  5. Coconut oil (preferably)/ Cooking oil - 2 tsp
  6. Mustard seeds - 1/2 tsp
  7. Curry leaves - a few
  8. Salt - for taste
Method:
  • Grind together shallots and dry red chillies.
  • To the mushrooms, add the grounded paste, turmeric powder and the required salt and keep aside for 5 minutes.
  • Add some water to this marinated mushrooms and allow it to boil. Cook till the mushrooms are soft.
  • In a kadai pour some coconut oil/ cooking oil. Splutter the mustard seeds and curry leaves.
  • Add the cooked masala mushrooms and shallow roast it.
  • Yummy Mushroom Ularthiyathu is ready. Tastes best with hot rice or rotis.

Muringha Ila Chaaru (Drumstick leaves curry)


Happy to post my first dish! This is a very easy and healthy way of cooking drumstick leaves.

Ingredients:
  1. Drumstick leaves - 1 cup
  2. Bengal gram - 1 tsp
  3. Yellow split peas / Thoor dal - 1tsp
  4. Black gram (skin removed) - 1tsp
  5. Pepper corns - 1tsp
  6. Cumin seeds - 1tsp
  7. Dried red chillies - 2 nos
  8. Shallots - 10 - 12 nos
  9. Garlic cloves - 2 nos
  10. Coriander Powder - 1tsp 
  11. Turmeric powder - 1/4 tsp
  12. Salt - for taste
  13. Water - 2 to 3 glasses
  14. Refined Oil -  1tsp
  15. Coconut oil - 1/2 tsp.
Method:
  • In a kadai sprinkle some oil and fry all the ingredients from 2 to 9 until the shallots turn to brown color.
  • Leave the above mixture to cool down and then grind it together by adding some water, into a smooth paste.
  • Dilute this grounded paste by adding some more water.
  • Add turmeric powder and salt and allow it to boil.
  • Add the drumstick leaves.
  • Allow the curry to boil for 10-12 mts. Make sure that the drumstick leaves are cooked well.
  •  Remove from fire and as a last step, sprinkle the coconut oil on the top of the curry. This gives a flavour to the curry. This can be avoided if you don't like the taste of coconut oil.
  • Tasty drumstick leaves curry is ready. Goes very well with hot boiled rice.

Surprise start.. :)

I am really new to cooking and very much new to blogging. I never thought I would create a blog so soon. It would be a sweet surprise to my people especially to my husband if he knows about this tomorrow morning. I have tried some good recipes worth publishing and I promise to publish those soon. I think it will be a tough time for me to blog besides managing my naughty baby. But I would like to take the challenge. With all of yours' wishes and blessings; here, I am kick starting!!!
